Ingredients:

  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 100g ginger, crushed (could be about 1.5 table spoon)
  • 2 garlic cloves, crushed
  • ½ teaspoon red chili powder
  • ½ teaspoon chili flakes
  • ½ teaspoon cumin powder
  • ½ teaspoon cumin seeds
  • ½ teaspoon ground coriander
  • ¼ teaspoon turmeric powder
  • 2 eggs, beaten

Instructions:

  1. Heat oil in a pan and fry the onions until golden brown.
  2. Add the crushed ginger first, followed by the garlic. Sauté for 1 minute.
  3. Add a splash of water, then stir in all the spices. Continue cooking, adding more water if needed, until the ginger and garlic are well cooked and the mixture is dry.
  4. Pour in the beaten eggs and mix continuously until fully cooked (about 1 minute).
