This easy oven-baked salmon with roasted vegetables is one of those wonderfully simple family meals that requires very little preparation. Everything cooks in the oven at the same time, so there is no need to stand over the hob or prepare several different dishes.

For the salmon
- 1.5 kg salmon, cut into portions if necessary
- Salt, to taste
- Chilli flakes, to taste
- Garlic powder, to taste

- 2 courgettes
- 4 medium carrots
- 4 medium potatoes
- 1 box of mushrooms
- 1 teaspoon salt
- 1 teaspoon chilli flakes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Approximately 3 tablespoons olive oil
How to Make Oven-Baked Salmon with Vegetables
1. Prepare the oven and trays
Preheat the oven to 200°C. If using a fan-assisted oven, you may reduce the temperature to 180°C.
Line a large baking tray with foil and place the salmon on it. If you have one large piece of salmon, you can leave it whole or cut it into individual portions.
2. Season the salmon
Sprinkle the salmon with salt, chilli flakes and garlic powder according to your taste. Set the tray aside while you prepare the vegetables.
3. Prepare the vegetables
Wash and chop the courgettes, carrots, potatoes and mushrooms into bite-sized pieces. Try to cut the potatoes and carrots slightly smaller than the softer vegetables, as they take longer to cook.
Place all the vegetables on a separate large baking tray.
4. Add the seasoning
Sprinkle the vegetables with the salt, chilli flakes, oregano and basil. Drizzle approximately three tablespoons of olive oil over everything.
I normally estimate the olive oil rather than measuring it exactly. You need enough to lightly coat the vegetables without making them oily.
Mix everything thoroughly so that the vegetables are evenly coated with the oil and seasonings. Spread them across the tray in a reasonably even layer.
5. Bake the salmon and vegetables
Place both trays in the oven, with the vegetables on the upper shelf. Bake at 200°C for approximately 30 minutes.
The exact cooking time will depend on the thickness of the salmon pieces and the size of the vegetables. The salmon is ready when it is opaque and flakes easily with a fork. The potatoes and carrots should be tender when pierced with a knife.
If the salmon finishes cooking before the vegetables, remove it from the oven and allow the vegetables to roast for a little longer.

- Cut the potatoes and carrots into smaller pieces so that they cook at the same rate as the courgettes and mushrooms.
- Spread the vegetables out rather than piling them on top of one another. This helps them roast instead of steaming.
- Adjust the chilli flakes depending on how spicy you want the meal to be.
- Avoid overcooking the salmon, as it can become dry. Begin checking it shortly before the end of the 30-minute cooking time.
